For those asking how to increase the number of varieties collected:

Make sure you plant & pick all possible varieties for each skill level at least once. Let's say you are up to 4 beans...you'll want to plant ALL of the 4 bean flowers (you can do two of each variety since there are five). After harvesting, you can pick a combination that is easy for you to remember and plant it over and over until you get to the next level - then rinse and repeat.
